Hotel Nikko Bali Benoa Beach is delighted to announce the appointment of I Wayan Sudira as the new Executive Chef that will lead the culinary department at the 5-star resort.

Born and raised in Bali, Chef Wayan has made cooking his lifelong passion and vocation. His career started in Bali and he quickly explored other regions across the globe with various international brands. His latest portfolio shows his venture with prestigious awarded resorts in the Maldives and the Carribean, where he managed multiple dining outlets with well-rounded specialties.

With nearly 4 decades of experience in the hospitality industry, Chef Wayan is ready to bring the culinary experience at Hotel Nikko Bali Benoa Beach to a whole new level. Through his expertise in fine dining cuisine, the seasoned chef will be making exciting changes to the dining repertoire, including on-site feast and food delivery selections.

“I am very grateful for this opportunity of joining the team at Hotel Nikko Bali Benoa Beach,” expressed Chef Wayan about his new journey with the hotel. “I look forward to elevating the dining experience for our guests through revamped menus and a more sustainable approach to our whole process,” he added.

Starting this January, Chef Wayan will be overseeing the kitchen operations of the hotel’s 4 versatile dining outlets as well as banquets catering for meeting, wedding, and private events. With his presence, the hotel will be more involved with the local community in sourcing native ingredients and sustainably grown products for the menu.

Already in his agenda is the launch of new signature dishes for Bali Luna, the hotel’s international contemporary dining restaurant that combines the sophisticated ambience of a world class eatery with a relaxed pool view. “We try to move further towards localism and climatarian lifestyle, which emphasizes greatly on locally sourced ingredients and careful picks of products which have a less taxing impact on the environment. In addition, I’m also focusing on growing the healthy menu selections at Bali Luna to offer more variety for people with specific dietary needs such as vegetarian, vegan, halal, kosher, organic, and gluten-free,” he explained.

This new direction is aligned with the hotel’s commitment to be more sustainable and inclusive when it comes to available services for its guests that came from all walks of life.
